Lets take Ashoka for example. It was already a stretch to bring her into TCW given that she's never even hinted at in Revenge of the Sith, through the years, they've made her out to be this hugely important character. Thanks to the Mandalorian, I'm to believe that she has stayed alive throughout the entire timeline of the OT yet the longer she stays alive, it just continues to introduce more and more plotholes. Is it truly in chararacter for her to play zero role whatsoever in Luke's training as a Jedi?
What could she have been doing during the entire time of the original trilogy that would be more important than helping the son of her Jedi master and the Rebel Alliance overthrow the Empire?
Ashoka was in Star Wars Rebels as one of the main people basically behind creating the rebellion to fight the Empire. She was working with Leia and others. In Rebels the Ghost and some of the crew were actually in Rogue One.
During the OT timeline based off canon not EU she was out looking for Ezra with Sabine.
One of the reasons for staying alive as well after Order 66 is because she had already left the Order prior to that.
So yes in regards to not helping Luke as she did not consider herself a Jedi anymore and she would not have been privy to the birth of Luke or Leia at the time. Ashoka wanted to keep her identity unknown as well as only what three people even knew of Luke. Even Luke did not know who his father was until the end of ESB.

Alright I thought I was a fan, after following this thread obviously I’m not. Suggest to me like I’m a newbie what should I watch and in what order?

You clearly didn't watch the series finale of Clone Wars.
She, Rex and Maul fought off an entire ship worth of clones to escape and she faked her own death.
