What is the word on the amount of trails open in Snowmass? Also, any word on the restaurant scene in Aspen and other activities as it relates to covid?
We [party of 4 (2 skiers, 2 non-skiers)] are scheduled to go to Snowmass mid-February 2021. However, the deadline to cancel our lodging for full refund is next week.
Any advice?

The lack of open trails is due to the lack of snow, not Covid. The forecast is looking much better through December.
Expect nothing in terms of restaurants and you won’t be disappointed.

We're leaving next Wed and much of the mountain is still closed. I'm hoping for some heavy snow between now and then. Ajax looks better for skiing right now.
I think restaurants will be what you make of them. It seems most places are open to some capacity. We'll try to eat at non-peak hours and make reservations if possible (you will have to give your credit card number to hold a reservation). Sounds like restaurants on the mountain will have to-go food with outdoor seating areas.
