I like fried eggplant as well.
Another dish I make frequently with garden eggplant is Eggplant casserole - where you cook diced eggplant with ground meat, vegetable seasoning (onion, celery, bellpeper), salt/pepper and some Italian seasoning, mix it with cooked rice and then stuff into bell peepers or Carmen peppers with a a little Italian breadcrumbs on top and a pat of butter/margarine and bake at 350 F for 45 min or so, or nix stuffing it in peppers and put in a casserole dish with the Italian bread crumbs on top with pats of butter and bake..
