Skied at Wintergreen a handful of times. Not bad for a southeast ski resort. Never been there during the summers.

Old Edwards Inn in Highlands NC - has golf and lots of other activities.
Greystone Inn at Lake Toxaway. Had dinner there on the 3rd. Looks like it might fit what you are trying to do. Really nice spot.
