Oh my sweet summer child. Even if we get the next book, I think the chances we see the last book (if he's even capable of finishing it in 2 books at this point) is very small. Authors over the age of 70 typically don't put out many books to begin with, much less George, who has taken almost 10 years so far. I've been reading the series since like 1998, so it's massively annoying, but I'm over it at this point. If it winds up being finished and is good I'll be happy, but otherwise meh, there is a ton of fantasy being produced that's better quality than books 4 and 5 of ASOIAF.
As far as the quality of the show goes, season 5 was very weak outside of hardhome, and the first half or so of 6 was very weak too (the end was of course amazing). Season 7 was decent enough even if it was super fan service, but nothing special. The series mostly started to go off the rails once they passed George (or ignored what he wrote in terms of Dorne), it just didn't completely come off the tracks till season 8.

even the end of season 6 kind of pissed me off in some ways. Maybe I was done with the show mentally at that point.

Like at Battle of the Bastards, which was cool and all but it just didnt make any sense to my. The whole thing from jon deciding to fight with what they have, then just abandoning his whole plan of battle at the beginning, then just getting saved by a surprise cattle charge (again).
Cersei in the last 3 or 4 episodes was legit though, but it was like the only thing I thought was really well done

hmm, I see your point. I never read fantasy before GoT. Still looking for a great series. This is what I've read:
ASOIAF-I have to rate it a 10
Dune- I rate it a 6
Lies of Locke Lamora- I give it an 8
Reading Assassins Apprentice right now. I like it.
