Sausage gravy with smoked sausage?

I feel like some biscuits and sausage gravy but do t have breakfast sausage and don’t feel like going anywhere. Has anyone ever made gravy from smoked sausage? How did it turn out? Worth even trying?

yes
chop it up fine and brown the shite out of it.
remove with a slotted spoon and proceed to make the roux with the sausage grease and a little butter. add the sausage back in after the milk/pepper/etc

Would add a different take but seems it would be fine.
May have to give it a try.
I’ve used regular ground beef when that was all I had on hand.
Seasoned and browned. Wasn’t the same flavor profile as breakfast sausage but very much edible.

Ive made breakfast gravy with smoked sausage, boudin, corned beef, etc. All good.
