We are gonna play our best game of the year. I started my gumbo yesterday afternoon and just tasted it. Not lying, it’s probably the best gumbo I’ve ever made. And that’s saying something.

Actually half jar and half homemade roux. Over the years I have found that that tastes best and gives the best consistency. I like it.
No tomatoes, though. Yankees from north of Opelousas would be disappointed.

Approx. 60 gallons cooked yesterday for Church fundraiser but us men were certain to take our prepaid shares home early for the game today...its on...Geaux Tigahs!

I made one Christmas Eve that is the best I have ever made. Still have some left for the game.
