Probably sometime in the summer and not sure yet where were staying or what parks we'll be hitting up. The only I know for sure I want to check out is Galaxy's Edge

Kinda hard to offer advice with no context. Check out FrogTours crowd calendars and other Disney threads here I guess. Definitely be awake early and logged into MyDisneyExperience to make FastPass selections the morning you gain access to do so. You’ll be waiting in line the majority of your day during the summer so you may want to have a plan for must-rides and skip the rest.

If I can make a suggestion, Port Orleans Riverside is excellently located in relation to parks as a collective - last thing you want to do after being on your feet all day is stand for a 45 minute bus ride. It’s one of the mid-tier priced resorts and is all the nice you need in my opinion.

Hoop Dee Doo Revue was a legit first dinner. Bottomless beer, fried chicken, and ribs hit the spot after a travel day. Outside of that, recommendations for rides and grub depend on your park schedule.

On the bright side, there will be countless tour groups of Brazilian girls in tiny shorts and no bras during the summer. Mirrored lenses my friend.
