Every school who has a decent starting quarterback will be majorly affected by an injury.
Some of the factors that mitigate this would be good OC, good Oline, good RB, in that order.
On the other hand, a team like Georgia, whose qb is not having a top notch season, may not see as much of a difference, plus they have a good defense to overcome slow offense
