EVA Air - Seating Questions/Recommendations

Looking to book a flight on EVA Air for February 2020, but have no experience with this airline.
For those that have flown before, what are key differences between Economy Standard/Plus and Premium Economy Standard/Plus? There are quite a few options, so I'm a little lost.
Will be traveling with my fiance and neither of us prefer to sit in the middle group of seats. Should we be aiming for Premium Economy Plus or Standard?

The Premium Economy should recline back a bit farther than economy (noticeably farther, actually). Plus, they'll have leg support like the old domestic first class seats from the 80's/90's.
Depending on where you're flying, they are worth every penny.
I've flown EVA about 5 times... always enjoyed the flight. (admittedly, I was in the premium/business class, so that may disqualify my judgement.)

If price is no obstacle, then go for premium economy plus or even business. Otherwise, go standard economy.
