Sous vide then. Go get a Joule. Relatively cheap. Can use ziploc bags for the submersion.

Butter, couple sprigs of thyme, few busted cloves of garlic, two chicken breasts salted. Cook to your preferred temperature inside (this process will allow for safe pasteurized medium temp chicken. Take out, pat dry, sear in pan for a crust. Can do the water bath part for a few breasts, then sear them throughout the week for dinner.
