I have Travertine as well. IMHO it’s well worth the added costs if your budget allows for it.
As blistering hot as the sun and temps are right now mid summer day, the travertine just feels ‘warm’ to the touch. Meanwhile our concrete and pavers away from the pool area will scorch your feet if you step on them. And it makes a nice seamless transition from deck to the actual coping.
I can’t speak for Pebbeltec but it seems nice. We have plaster with no issues (yet) and it’s very smooth.

Thanks - curious about quartz as a finish. from what i've read the aggregate used in plaster is a marble which is much softer when compared to quartz so it is supposed to hold up for longer.
