First, way too many main characters survived episode 3. Most of them already have completed story arcs.
Anyway. We need to assume the force of Daenerys force. Majority of the Dothraki and Unsullied are gone. As is the leftovers of the Northern forces.
I'm going to be very generous and say she has 1000 men left (although the show will probably beef that number up ala plot magic).
Yes we have 2 dragons, but even with them, they still have to worry about the Ballista (unless Dany conveniently forgot about it).
They have 2 options.
An infiltration/assassination mission.
Try to get more forces (although with only 3 episodes I dont see how that works or who is left to recruit from)
A large scale battle with Cersei is akin to suicide.

I don't think that much of an issue. Now that it seems like we'll be getting a 2nd big battle with the Golden Company it is possible that a fair many of these characters will just die then instead. Honestly, since it looks like we are having 2 big battles it makes sense to save some of our heroes so we can get some more "OMG. Not Character X" death scenes in the 2nd battle

This is interesting because I would be shocked if there were even 500 men left at Winterfell that are actual soldiers. A few possible options could be:
Still a considerable amount of Knights of the Vale left at the Eyrie/Runestone.
Frey's?
Ironborn?
Second Sons?
Dornish?
Cercei has 20,000 soldiers give or take and we know that The North isn't going to be able to round that many up but I will be shocked if they don't find some amount plus 2 dragons to make it interesting. Or like you said they could just 'plot magic' a bunch and not explain it.

I believe there are still some loyal soldiers in Pyke. Also knights of the vale, as well has some other houses that didn’t send their forces.
Cersei doesn’t have a massive army but it’s definitely bigger than the survivors of the BoW. You know they’ve produced a hell of a lot of scorpion bolts as well so the dragons won’t be a huge factor, and in fact one maybe both will die.
I’m quite sure there will be quite a few plot twists to come

I was thinking about this as well and then it hit me...Daario! Dario and the 2nd sons were left in Mereen to keep the peace and Yara and her ships went back to the Iron Islands to because the dead can't swim. Odds are both will be joining Dany for battling Cersei.
