Crawfish? I will never understand it. They are decent, but they arent nearly as good as shrimp. They arent as good as crab and they arent even in the same ballpark as lobster. Louisiana has so much to offer when it comes to food. Shrimp etoufee’, gumbo, red beans and rice, boudin, boudin balls, fricasse’, poboys, mufalettas, courtboullion, macque choux, meat pies, blackened redfish, fried specks, fried frog legs, crab cakes. The most Louisiana bite of food I think you can get that I would be proud to serve someone would be a roux base rice and gravy, preferably seafood, with a fried shrimp on top.
Edited to say jambalaya. True jambalaya cooked in a cast iron kettle with pork temple meat and smoked sausage done the right way.
