Seriously try avocados. They are actually very good nutrition for babies. They are super easy to prepare (just have to wait for them to be ripe). Just cut them open and spoon out in bite sized pieces.
Scrambled eggs are great protein and very easy for a 1yr old to eat and pick up.
Baked Sweet potatoes are also very easy and good for them.
