We have been doing the red wine vinegar mix with these but to me they dont need anything. I havent even bothered to squirt lemon.
I like shucking them too. Some of them are hard to open but its a consistent spot to go in at.

Yep there’s a sweet spot to the left of the hinge. I tell people to classify the taste of these oysters to a Chardonnay grape. They take on the flavors of the environment around them. Also the tides and the winds help with the salt and brine. Farms 6 miles apart with have totally different flavor profile.
