Lan Zhou Handmade Noodle and Dumpling - 40 Bowery St.
Ivan Ramen - 25 Clinton St.
Mala Project - 122 1st Avenue
These are the 1st 3 places on my NYC list when I go back. I've been to Ivan Ramen before and it is outstanding. Menu has more than just ramen.
Lan Zhou supposedly has the best dumplings in New York and they are super cheap. Handmade noodle soup bowls also at a great price.
Mala project has some incredible looking sichuan dishes.

They are all nice people, but the not the most adventurous eaters. Like seafood and anything to "ethnic" is scary to them.
Motorino in East Village had really good pizza.
