You have corroded connections. May look fine, but it's not. May also have failing alternator. Heat in the daytime is draining some of the battery. Not much but just enough. Clean connections at battery, alternator, and starter. Also slow charge battery all night.
Everyone should keep this tool in each vehicle.

Your OP says it does it after sitting at work all day. If it does it when sitting for extended periods, check the battery with a multimeter. Report back

What noise does it make?
Eta: I wanted to guess it was fuel pressure related, but it would do that overnight, not throughout the day. It certainly wouldn't hold pressure for two days

The good thing is you can almost certainly eliminate the problem being battery/starter. The bad thing is that your problem will be hard to diagnose as the culprit could be many things. Its even hard for a mechanic to fix if when you take it to a shop and it doesn't act up.
You may just have to wait it out until the problem gets worse so it can be traced.
Shitty answer I know but its a shitty problem to have.
