My old Nonc from Vacherie makes Choupique patties with them. They really good.

I like choupique better than gar honestly. Choupique are a pain to clean because you have to do it all in one day or it turns to complete mush. Best is catch them make the patties and cook the gravy all in the same day or vacuum seal the patties once you make them to hold them together.
