Ive since read that the brain actually burns carbs for fuel like the rest of the body

I guess i dont follow your point. You seem to be saying that the body can generate the needed glucose for proper brain function, but then urge to keep the dairy? Is there much glucose in butter? Is it necessary? Please expand that point. thanks. Im in the deep end on these topics no doubt
The average human brain requires ~4g of glucose per day to power itself. That is child's play for your metabolic processes/organs to generate daily. Please don't cut out the dairy!
