We stayed at Sandal's Regency La Toc in St. Lucia back in March for our honeymoon, 7 nights total I want to say was around $5500 not including flights. We put the trip on a credit card with flyer miles, paid off the trip and were able to get both of our tickets for I believe $450 total using the miles we accrued from the trip payment.
Here's a copy/paste of a short review I posted last month.
There are probably other cheaper options out there but we enjoyed our time and had no complaints.

We flew from New Orleans to Miami, then Miami to St Lucia(less than a 4 hour flight), from there it was a 1 hour bus ride to the resort. We did the deep sea fishing excursion and that was a good time, had read great things about the Joes Knows tour but decided against them when we watched them pull up to the beach and unload 27 people off of what is basically a 30ft center console boat, frick that. We pretty much hung out at the beach and swim up bar the whole week.
Our room was I suppose around the middle for their price range, we didn't do butler service or a room with a private pool or anything special, it was the "Pitons Oceanview with Private Sundeck". The room was nice and overlooked the bay/beach and we'd hang out and watch the cruise ships come in every morning, and was constantly stocked with drinks, beer, wine, etc. Overall we had a great experience and would do it again.
