I know of a handful of guys at LSU that were told by coaches not to take certain courses. Joe Barksdale immediately comes to mind. He wanted to take a number of philosophy courses while at LSU and a number of coaches were not exactly thrilled with that.
Arian Foster also talked about his experience at Univ of Tenn on his podcast and how they had a set plan for him as far as classes were concerned. Midway thru his sophomore year he decided to change things up and take classes that he found interesting. A number of the coaches labeled him as a "problem" and "not apart of the team" when he did this.

Now, if you are picking electives that interfere with practice times, there can be issues. But honestly, its not really that outlandish for a coach to not want you to take elective classes that overrun your practice
