I'm probably underestimating the time, didn't know it would trigger net. The last time I made it was for a couple friends right before we went to this event and one kept joking all day that he just wanted a sandwich but I threw shrimp and grits on his plate in 15 minutes.

Boil 2 cups of milk and 2 cups of water. Whisk in grits, cook on low whisking often.

While it's simmering, chop and sautee bacon and onions, add flour for a light roux. Whisk in chicken stock. Season to taste, then add shrimp.

Whisk cheddar and butter into the finished grits and serve. I use an all clad sauce pan for grits and they usually only simmer 15ish minutes. Burned them the first time when I went 20.

Dude,

I love shrimp. And I love grits. I love shrimp and grits. But when you talk about making them quickly for breakfast you lose me. That's just crazy talk.

With the rest of the thread as a good primer, I actually laughed out loud when I got to the "make a roux" part of your quick breakfast recipe.

Thanks. Do you use any butter during the saute or just the bacon grease?
