DFW is nice for plane watching and I do love the busy-ness. You just need a good chunk of time for layover.
My top 3:
DEN (although pissed the closed off the bridge security last time I was there).
DTW
MSP (although the security at T1 blows but once past it, it's a pretty cool. Haven't flown out of T2, but will in a few weeks)
