I go down to Christmas Bay. There are a few spots to put in off the highway. I've also gone to the Brazoria Wildlife Refuge and fished Salt Lake but haven't had much success there.
I've driven to Matagorda once and enjoyed it but it was a lot for one day.

I Agree with the Fayette county lake. But just make sure there isn't too much wind blowing. It sits on the top of a hill pretty much and the wind can limit the places you can fish on Kayaks. If you go I can give you some spots as well within easy reach of either boat ramp.
