This isn’t related to racial stereotyping, but a line that always made me crack up was in the episode where Jim becomes a co-manager
Michael: well, to be fair, Jim... James... Jimothy... To be fair, Jimothy, the-- ah, that sounds weird. Are you okay with being called Jim?
Jim: I am.

This isn't Michael but still fits the unintentional racism theme.
Dwight: Oscar went to Mexico, when he was 5, for his grandmother's funeral. That means he is a potential drug mule.
