Google Flights is showing $920 on United, for those exact dates. Adjust by a few days and it goes down to $902.

I’m going to and from France around the same time. Booked months ago at $750 and google alerts have been $900+.
At $1k, might as well look into La compagnie and upgrade to “business” for the price of the EWR>MSY.

I'd suggest playing around with making your own ticket.
For instance there is a Paris to Chicago roundtrip 3/2-3/10 non stop for $514. Add in a cheap flight to nola and you should come out around $620-630.
It all depends on the amount of hassle they are willing to deal with to save some money.
Paris-boston, train to Providence,RI then direct flight to NOLA on Frontier can probably be had for cheap. Same with Paris-NYC, then Islip Long Island to NOLA, Paris-Orlando, Paris-Fort Lauderdale, etc.
For low cost airlines I'd look at Norwegian out of Orly to Newark, Frontier out of Islip to NOLA. Should be around $540.
