Would the restaurant even have it? My understanding is that restaurants in the US don't get the real thing and only have the horseradish paste with green food dye.

It’s like a chopped up root in more of a green liquid. The two sushi restaurants I’ve had it are in California, though, but they aren’t particularly fancy or special places. Can’t hurt to ask.
