I've had great experiences going the week after Easter when Easter and spring break are not close. All the kids have the week before Easter off and are back to school the week after. Easter is a more religious holiday anyway and the parks aren't all decorated like they are for Christmas, so they're not drawing a lot of crowds for that. The spring breakers are taken care of because it just isn't spring break time at Easter some years. The weather might even be considered comfortable at Easter.

I've been on major rides late in the afternoon on Easter Sunday and got to the unloading station at the end and the cast members let anyone who wanted to go again just stay in their car because there was nobody in line to get on the ride.
