Saw this yesterday. My assumption is that he's blanching these so he can peel them and then cook the tails further in another dish? I mean. Surely that's not a final product. He knows better.

I saw it and commented to my wife, "Did he just do that to piss off a bunch of people or what?"

And the guy calls himself a chef....
