I think they left Beth's choice open ended. She stated "I know what I have to do" and next you see her in the kitchen with the kids and saying Rick is the best and it's all great

Think the twist in a later episode will be that Beth choose to create the clone and live the life she wants, and that's why the family dynamic was so cliche at the end, basically because rick programmed the clone to be that way
