I'm not a cheese expert, but I love going to the creameries and buying/sampling cheeses. Face Rock Creamery, Rogue Creamery (not related to the brewery), Tillamook, Willamette Valley Cheese, etc. It's great.

Still hard to beat a good aged cheddar, in my book, when you're just eating cheese. It doesn't melt as well as other cheeses, but I love eating it by itself.
