I agree with the Parmigiano Reggiano mentioned earlier. However, just to come up with a different answer...

There's a cave-aged Gruyere cheese sold by a local supermarket chain (King Sooper) that is just out of this world. Creamy, nutty and mellow with some amino acid crystals to give it a slightly crunchy texture. I want to make some French onion soup just to use some of this cheese in it.
