This...plus you might take it down to Indian Pass or Apalachicola Bay.
Also, don't shy away from the freshwater fishing in that area. You could head up to Dead Lakes (~15 miles north of Mexico Beach) and wear out some monster gills.

Y'all are getting me excited. My wife might divorce me after I spend our entire vacation fishing by myself.
