Your gunna laugh but I've done this with redfish, boil it for a short time in water with salt and crab boil, chill it quickly, use it as a crab meat substitute in crab au gratin or other crab meat recipes

THIS!!!
Using black drum as fake crab meat is the best way to utilize this fish.
