i was at maxwells last night getting some chops.
One of the guys working there apparently does the salty dog method for boiling crawfish. I have never heard of this method but apparently its some of the best crawfish around.
The gist from what i gathered is he makes his own seasoning then he boils them in seasoned water. Then puts them in the cooler and "salty dogs" them down with his seasoning until it evaporates off the shells.
