He was clearly lighter as a Sophomore and it showed
RBs don't need to be 240lbs. He can do the same things at 225 plus more than what he can do at 235-240.

A picture surfaced on social media of a shirtless running back tandem of Fournette and sophomore Derrius Guice looking extremely fit. “(Fournette) for his size was phenomenal,” Moffitt continued. “I don’t remember a back in recent history that was impressive on their conditioning test as that guy was.”
Moffitt praised Fournette for his perfect attendance during May’s voluntary workouts during the NCAA’s discretionary period.

LSU'S official football roster in 2015 has him at 235
But they also have him at 235 for the 2014 roster so they may have just used 235 for his profile.
