Bad restaurants can't leave the state and lie to a new crowd, so they die. This is what SHOULD happen.
Food trucks are some romanticized thing, but more than half of them aren't worth shite.

Same thing applies to brick and mortars. I can't think of any bad food trucks that are really successful.
