I don't have time to read the entire thread right now so I'm sure that this has been brought up but Jedi is singular and plural. The title could refer to Luke and Rey.

There could be one Jedi or 60 Jedi and they could legitimately be referred to as the "last Jedi."
I feel like the title is a call back to Yoda telling Luke that when he died Luke would be the last Jedi but the title alone is ambiguous on it's own.
