Did you marinade beforehand? I recently cooked one like this but marinaded in a dales/brown sugar mixture and then topped with diced garlic prior to wrapping it in bacon. Cooked until medium rare, it was great

Yeah I've used Allegro in the past and also stuffed with cream cheese and jalapeños before.
