Great trip, good info below. if driving, do hit Bled, Bohinj, ljubljana in Slovenia.
Plitvice is an all day deal, we actually go to Krka.
North of Split, Trogir, Salona ruins, Sibenik, and Zadar are well worth visits.
South of Split, hit Omis, Brela and Ston (best oysters I have ever eaten).
We stay at St. Lukes in Split. Just out of the Palace, but close parking lot, walk out onto Riva and 5 minutes from ferry.
Hvar island, we usually stay in Stari Grad. Too much night party stuff in Hvar for us. Last year went on wine tour to Tomic Winery in Jelsa, that was good.
Mostar, we have used B&B Mooostar City Apartment No 1., hard to find, but they do have parking on site. Easy walk to old bridge and bunar bridge. Be sure to hit Blagaj, Kravica Waterfalls, Pocitelj - all between Mostar and Ploce/Dubrovnik.
Beaches mostly rock, further south more sand, there is a sand beach on Korcula and one near Dubrovnik.
There is so much to do and see, kinda hard without knowing what you like (history, art, architecture, active, etc...) We have been 8 times and headed for our 9th in May (BiH only 3 times).
