That's just old classic tex-mex from the 70's.
El Tiempo and Ninfas in Houston, El Fenix in Dallas, and Matt's El Rancho and El Patio in Austin, Garcia's and Mi Tierra in San Antonio are more along the lines of classic pre-1940s/1950s Tex Mex

Yep. A proper old school style chile cheese enchilada can be a glorious thing.
