I went at 5:30pm on a Wednesday and it was packed. Strange.
I got a cheese enchilada and it was OK but I just dont like American cheese/Velveeta that much, and thats what it tasted like. I would like it much better if it was full of Jack cheese.

That's just old classic tex-mex from the 70's.
El Tiempo and Ninfas in Houston, El Fenix in Dallas, and Matt's El Rancho and El Patio in Austin, Garcia's and Mi Tierra in San Antonio are more along the lines of classic pre-1940s/1950s Tex Mex
