Depends on what you think simpleton humor means. Most of the jokes in Zoolander are overly simple and stupid...that's kind of the point. I mean, the main character is a completely self-obsessed male model who thinks he is the shite while everybody else laughs AT him.
It's supposed to be stupid. It's supposed to be "simple." It's about vapid male models getting caught up in international conspiracies and whatnot. I mean, there's a gasoline fight for chrissakes.
I'm not saying you have to like it, OP, but I always kinda feel bad for people when they can't just sit back an enjoy a silly/stupid comedy.

It is also important to remember what was going on in pop culture at the time. The boy band was nearing it's peak. This was MTV and TRL's last stand before napster changed everything.
So the pop celebrities at the time were in a bubble of self-gratification and just utter ridiculousness.
