Good idea... I'd do Mon Ami Gabi for Breakfast, Circus Circus or Top of the World for dinner. If I could only choose one buffet it would be the Seafood Buffet at the Rio.

That sounds good to me. Top of the World looks like a pretty unique experience although I do like that Circus Circus is not a la carte. Either way, looks like a $200ish dinner for 2 at either place.

How far out would we need to make reservations at places like these?

Also note that now the seafood portion of the buffet at the Rio is an add-on to the normal buffet price. And all reviews I've seen have said it's really slipped in recent years. I haven't been over to the Rio in several years though. No reason to go out of your way.
