No experience with LEM but I own a cabelas .5hp one that I'm very happy with. I don't take 5-6 deer a year, but I would recommend something at least in that power range for what you're looking process.
At that range you're looking at >$300, but don't waste your time with a cheaper model. They will have cheap components and will break with the kind of use you're looking to get out of it.
The one I bought came with the tubes needed to make sausage. There may be some easier add ons out there with different brands, but like I said, I'm happy with mine.
Cabela's .5HP
The one linked is a little different than mine being that mine is about 5 years old now.
Side note: I make my burgers now by purchasing a whole chuck roast and running it through the grinder. Highly recommend.
