The part you're worried about is fairly tame by today's standards - but keep in mind, Stanley fricking Kubrick, the guy who directed The Shining, was too afraid to audition Bill McKinney for the gunnery sergeant role in Full Metal Jacket because he couldn't bring himself to be in close proximity with the Mountain Man from Deliverance.

Overall, Deliverance is a "must see" film - one of the very best films of the 70s - better than The Deer Hunter, for example.
