As I understand, Mississippi legislature passed a law a few years back that states you must display a sign telling the public where your catfish comes from. This was pushed by the MS catfish industry and makes perfect sense to me. Most catfish restaurants I have been to have a sign somewhere around the cash register provided by the vendor saying something like "We proudly serve Simmons Catfish". or at least, "Proudly serving Delta Catfish"

The bulk frozen fillets you buy at Sam's clearly show the vendor here also. In our area, they are almost always a MS delta processor.

I like the clean flavor of farm raised and would rather eat Mississippi Farm raised catfish than river catfish, but I'm sure that is just me. To me, most river catfish has a muddy aftertaste and to me, the Asian catfish has an aftertaste like Asian body waste.

Off topic, but Chinese crawfish has a muddy ditch taste to me. Something about the idea of harvesting my crawfish tails from a ditch in China turns me off because I know what is in their ditches over there.

I feel the same way sometimes about south Louisiana crawfish from ponds filled with runoff from chemical plants and rice field fertilizers.
