You can't DH for anybody other than the pitcher. You could play without the DH and have the pitchers hit for themselves, but you can't DH for a position player other than the pitcher.

I'm not saying you're wrong, but I don't see the reasoning behind this rule at all. We did it in high school and American Legion ball all the time. We never had a pitcher who could hit worth a shite in college, so I don't know about that. Obviously, MLB is different, but it seems obvious that it would be much less advantageous in MLB. So I'm not sure why the need for the rule.
