i thought this would be gross but I tried it at a restaurant and it was actually really good: fried rice dressing balls. They made rice dressing, put in fridge to tighten, made balls about the size of ping pong balls, rolled them in bread crumbs and flash fried.

How could you have ever thought that would have been gross? Fried rice dressing is very close to a boudin ball.
One of my favorite things fried is stuffed bread slices. We take Bridgford Bread and roll it out then stuff it with a dressing mix/cheese/onions/smoked sausage mixture and then bake it. Let it cool, slice it about 1" thick, dip in eggwash then into flour and panko, then deep fry. It's amazing.
